One of THE dishes of Northern Thailand is khao soy.
It is a creamy curry soup, quite similar to a laksa, which contains soft noodles and meat. It is topped with some deep-fried noodles, and served with garnishes of onions, pickled greens and lime. The soup is smooth and spicy, and the crispy/soft noodle combination is especially delicious.
I ate this a few times, and even learned to cook it during my cookery course. I really liked this dish and hope to find a good version elsewhere in Thailand.
I like the idea of crisp and soft noodles.
