Now I am not quite sure how accurate this post is.
This is bun cha:
A light broth with vegetables, char-grilled sticky pork and a side dish of cold rice noodles. Add garlic and chilli to taste. Delicious!
But as far as I can tell, this is also bun cha:
Sweet grilled pork, cold rice noodles, an array of herbs and some rice paper wrappers to package the whole lot up into. plus a light dipping sauce.
Online research hasn’t shed too much light, although the uppermost pic may more accurately be called Bun Cha Hanoi – a very specific variant you only find in Hanoi.
I loved them both!
