I find potato cakes delicious but texturally unsettling. Especially cold.
There is a gnocchi-like bounce to them, but also a rubberiness. My brain expects a fluffier bread texture, and instead they are quite solid. Somewhat reminiscent of the mochi cake I made a while ago.
With all that said, these bought from a stall in St George’s Market were very pleasant. They were enhanced with spring onion, and although would undoubtedly have been better hot, were nice to chew on as we wandered the streets.
